UPDATE: Figured it out. But I have a table name (Entity) that is not legal in Cuba. So I will fix this.

How can I use existing CREATE SQL statements or an existing database to create the data model?

Only by creating that database and pointing Studio to it. Studio extracts schema from the JDBC metadata, so it needs a connection to a real database.
